I don't think it's possible, but I figured I'd ask!
I'm in Wilton Course 3, and I wanted to do a mini-replica of my wedding cake (flavor and all) for the tiered cake. My wedding cake had a strawberry mousse filling that was out of this world, and I would love to figure out how to make something similar.
I would like to avoid refrigeration mainly b/c my husband brings the cakes to work and I'm pretty sure they don't put them in the fridge!

I am really not sure but will give it a try. At one of the cake dec stores I go to I noticed that they have premade fillings, lemon curd, strawberry. Inquire about that.
What about mixing preserves with buttercream? I know it isn't a mousse, but it would be a 'creamy' filling.

I did this exact thing for my dd's cake last week. I mixed strawberry preserves mixed into meringue bc and everyone thought it was strawberry mousse
Try to find Pastry Pride. It's a non dairy liquid that you beat to a mousse consistancy and you can add anything you want to it. It comes in a 1 quart carton in vanilla or chocolate flavors. I find it in the frozen food case at Smart and Final. It comes frozen but doesn't have to be refridgerated after it's made. ( go figure!)
