When Can I Start Icing?

I have a Wedding this Monday (13th March). The wedding cake is mud cake and the fondant I am using is fondx. When can I start icing the cakes? thanks, Mel

I was just planning on using strained, boiled jam Nati.
What do you think?

Sounds fine, I'd say that if you dont mind the icing crusting, which they usually do a bit anyway, then you can start icing as soon as your cakes are ready. If you were using ganache, you'd need room in your fridge to store it in, but you could still start icing as soon as your cakes were ready. Im assuming that you have a very moist mudcake : )

Thanks Nati,
I thought I might start with the bottom layer tomorrow. I usuallly put noting under my fondant. I haven't had any problems with the mud cake being dry. It's a long time since I have had to ice a cake so large (12"),
I'm sure most of you do it all the time, but this will be my second wedding cake!

Actually Melissa, i havent done that many 12 inch cakes, it must be a large cake, how many people is it for??

The Wedding is for 100, and they are quite happy to have left overs. I have made 4", 6", 9" and 12". It is actually for my cousin, she wants the cake attached below, but with figures of the bride and goom(but not on the top). I will probably place them on the bottom cake tier. I am a bit worried that so much of the cake is exposed- it will have to be extra smooth! icon_redface.gif

That is a really pretty cake!!, you've got lots of time to cover them, so im sure you'll do fine. Are you making the flowers??
Do you have far to travel with it?

Hi Nati,
I'm not making the flowers, they are having fresh ones. Good thing as they have chosen terracotta orange- I can't work out what colour that is for the life of me. The wedding is at Bram Leigh, so not too far. Thank you so much for your help. I think you are fantastic. I just saw your lastest cake too- I love it so much!!!! icon_lol.gif
