Hi there,
I've been lurking on here for a while. You have all been such a great source of inspiration and information. I was hoping you could throw some of your experience my way. I'm doing a baby shower cake for early next week--a version of the clothesline cake--and had a few questions.
1--What icing consistancy is best with the grass tip--thin? medium?
2--If you can't refrigerate MMF (just started making it, it's so fun!), what do you do for cakes with MMF decorations and perishable fillings? Is it just the humidity that's the issue? Will it be OK if I just put the finished cake straight in the car (it's cold here right now) instead of the fridge?
3--What do you use to stick your MMF decorations to BC iced cakes--royal?
Thanks so much!
Alicia
Hi sk8gr8md! Welcome! Let's see if I can help answer some of your questions. I've made a few clothesline cakes - in my photos.
1. I'd use a medium consistency for the grass tip. Too thin and the grass won't stand up so well.
2. If I know I'm going to cover a cake in MMF, I won't use a perishable filling. Some people on here have refrigerated MMF, but I've never successfully done it. The condensation made it shiny and melty. I don't know if putting it in the car would make a difference or not. I think the problem comes from the temperature change? Someone correct me if Im wrong...
3. I just use a blob of BC on the fondant to stick it to a BC cake.
If this is a BC cake w/ fondant accents, you might be ok in the fridge. What filling did you use?
Thanks for getting back to me beachcakes! I'm making a lemon cake with raspberry mousse filling. Basicfally because it's a combo I've wanted to try and pink would go well since the shower is to celebrate baby girls. It's the recipe with cool whip, cream cheese, and preserves.
I just did a cake with mmf and put it in the fridge for an experiment to see how it would be. I had no problems with it.
