Coloring Italian Meringue Buttercream Help, Please

I'm making IMBF today and I want to color it in pretty vibrant colors. Will it work? I thought I read somewhere that this kind of buttercream just yields pastel colors. Is that true???

I haven't colored any....so I am gonna bump ya ! (to the top of the list my dear)

It will color but like the WBH icing it requires a bit more color.The Americolors work best for this I have found.

Although I've never attempted vibrant colors, I have had difficulty coloring it. I think the problem comes in with the butter. Regular buttercream utilizes veg. shortening which is more amiable to accepting color. What you end up with in IMBC is tiny little beads of color that haven't mixed properly. I've been told that using candy colors instead of gel colors helps but I have yet to try it. Sorry I can't be of more help.

Hi all for your quick answers.

I also had a concern about the icing turning bitter when adding too much coloring.... I don't know what to do... I still have some more time to decide... I will post picture anyway.

It colours REALLY well, but, of course, vibrant colours need a bit more colouring. As Kiddiecakes wrote, Americolor is great. You add just few drops and you won't believe it...and I don't taste even the slightest dye flavour.

Here's one of mine done in all IMBC. The green, and purple buttercream backgrounds were Americolor as well as the red & orange fondants. The rest were done with basic Wilton colouring:

Don't have Americolors icon_cry.gif (Just super red) Will it be a problem if I use wilton?
