Do you blind bake cheesecake crust before you fill? I think I'll make cheesecakes for gifts for valentine's day this year. I like the look of the crust half up the sides and I've always only done just the bottom and always prebaked the crust, but sometimes it doesn't come out right.
That's how I make my cheesecakes. BAke the crust for 10 minutes then fill and continue baking. Comes out perfectly for me.

I am of the "oppossite camp" here. I have never baked my cheesecake crusts first. I just pat them in the bottom and about 1" up the sides, and then pour the filling in and bake. BUT I am a definate water bath believer for them. I wrap the outside edge of the springform pan with heavy duty foil and set them in about 1" of water.
