I took a co-worker a birthday cake today and when the Secretary saw it she was amazed. She asked me if I did wedding cakes. I told her that I haven't but that it would be wonderful if someone ever ordered a wedding cake from me. She said she was getting married in August and needed someone to do her cake. But she was skeptical because I had never done one before icon_sad.gif Well you never know... she may want me to do it and she may not. I'll just have to wait and see. I mean come on... It's not until August. That would give me plenty of time! I know I could do it.

Do a couple of practice dummy cakes, takes pictures of them and take them to her to see!! You'd be surprised how when people see pictures of your work will place an order with you. Good luck and I hope you get the wedding cake!!

By the way, LazySusan would you mind sharing the bittersweet chocolate frosting recipe you used on your coworker's cake. It looks delicious!

I sure will! I actually submitted the recipe for it a few days ago but it hasn't posted yet.

Here it is! You'll love it. But I would suggest substituting half and half for the Heavy Whipping Cream!!!! LOL I did that and the frosting was way to creamy!!!
Now keep in mind that the eggs are cooked!!! icon_smile.gif THey are in the sugar mixture that gets cooked.

BITTERSWEET CHOCOLATE FROSTING




1 1/2 cups sugar
6 large eggs yolks
1 tablespoon light corn syrup
1 1/2 cups whipping cream
6 ounces unsweetened chocolate, chopped
3 ounces semisweet chocolate, chopped
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces, room temperature
1/2 teaspoon vanilla extract
*I also added about 1 cup powdered sugar to thicken it a little*



Mix sugar, yolks, and syrup in small bowl. Bring cream to simmer in heavy 3-quart saucepan. Add both chocolates and stir over low heat until smooth. Remove from heat. Stir in butter, then sugar mixture. Cook over low heat until mixture registers 165°F to 170°F on candy thermometer, stirring constantly, about 10 minutes. Immediately pour mixture into bowl; do not scrape sides of pan. Add vanilla.

Using electric mixer, beat frosting until cool. Let frosting stand at room temperature until thick enough to spread, stirring occasionally, 1 1/2 hours.

Makes about 4 cups.

Good luck on the wedding cake order! You'll do great, plenty of time to practice if you feel the need! Dummy cakes are a fabulous idea to convince the bride! They are also great just to have photos of in your album, for when others start asking!!!

Why dont you offer her a good deal. Tell her because you are inexperienced you'll do it for $x.xx per serving. Make sure you do some research and find out what the going rate is that way she will know its a good deal. Or you could throw in a free grooms cake. This way she will feel less hesitant on going with you because it won't be a huge investment. Plus you'll get the experience!!

Another idea is to make a mini tiered wedding cake and you could take it into work to show her, you could all have it for morning tea. I've made a 3 tier to scale, with the bottom tier around 13cm. It looked really cute. You can use cans as tins for the smaller tiers. Then you can say you have experience making wedding cakes!
