How do you make those cupcake cakes without the frosting falling between the little spaces?? I'm baffled.
I just made my first one wednesday night, its the yellow and red cake in my photos. As long as your icing isn't too thin, it doesn't seep down, it just basically glues the gap shut, making the surface even. Making the tops of your cupcakes flat helps with this too (just put a baking sheet on top of them when they come out of the oven...not too long or they stick, as I found out ). You also stagger them so they are as close together as possible. I had to try it out to see if it would actually work, and amazingly it does!
Mahal: She is talking about the cupcake cakes...it looks like a cake from the top, the surface shows no bumps or gaps. She was wondering why the frosting doesn't fall through the gaps between the cupcakes.
Arrange them as close as you can get them on the cake board and you shouldn't have a problem.
Just be careful its not too thin, I was having problems with my icing being too soft, and you could see the outlines of each cupcake. I eventually had to make another batch of icing, keeping it stiffer, so to make the surface even. You just don't want it so stiff that it pulls crumbs up, or lifts the cupcakes from the board

I use a ice cream scoop to scoop my cake mix into the liners. This helps you get an close to even amount of batter in each liner. Though you will still have a bit of unevenness. I have never trimmed my cupcakes to make them flat. What I usually do is place the taller ones in the center and work my way out, with the shortest around the edges. Then I just give a good coating of icing on them.
Also if you fill the cupcakes 1/2 full they will usually be more flat and come up right to or right above the liner. If you fill them 2/3rds full you will get the small hump on them.
Oh ok. Makes sense. I was actually thinking of doing the opposite... putting the tall ones as the border and the shorter ones in the middle. I will have to try making one one of these days but I'm on a hiatus from baking. I tend to eat my "creations" and im on a quest to lose a few pounds.
I had the same exact quesitons about cupcake cakes!
I tried one recently - sort of. I had some extra batter from a panda cake (photo is posteds) and I used the extra to do cupcake cake to write a mesage on. I was really, really, unsure how it would all work out, but I put the cupcakes as close together as I could, flattened the tops as evenly as I could, used a sort of thick icing... and WOW! I was surprised at how easy it was!

She explains how to do the cupcake cakes with the icing tip to make it quick and easy. She also has some examples on this site under the how to do FBCT . I have not tried this myself but hope to some day. You're right, it is hard to tell if it is a cake or cupcakes!
