I'm in love with this bakery's cakes and work in general .. someone posted their website in another thread yesterday.... I'm wondering what do you think they used for their writing and swagging?

I would guess it is glossy chocolate icing. We used this at a bakery I worked at. I don't know the maker but it was thick shiny chocolate icing. Maybe someone else knows where you can get it.

I would guess that it's melted choclate, but maybe there's someone who can read the Dutch (?)

It looks like melted chocolate to me...maybe chocolate piping gel? I love the handwriting...

From what I can tell it's melted chocolate that's thinned down some, maybe? icon_confused.gif And they probably just use a parchment bag with a very teeny tiny hole at the tip. I saw the link yesterday too & want to try it out sometime soon...maybe on my Valentine cookies thumbs_up.gif

They don´t say anything about it (dutch writing is very similar to the old, northern Germany dialect icon_biggrin.gif ). But traditionally those writings are done with chocolate coting which is thicken slightly with water. You really only use drops of water, so it´s holding the shape.

gma1956 ... that is an interesting product ... I wonder how long it will last once opened that looks like alot of icing... I'm a hobby baker and there are only so many birthdays in one family icon_rolleyes.gif .. if you know what I mean

I melted some chocolate yesterday to cover some strawberries ...so I took the opportunity and put some in a decorating bag to attempt writing with it .... well it seemed to lack elasticity I could never do the swags and curls with regular melted chocolate ..... there has got to be more to this ...anyone??

I found a recipe for the glossy chocolate icing .... wish me luck I'll try it over the next few days ... if it works I'll post the recipe
