Cooking Times For 3" Pans

I just bought some 3" cooking pans from a local bakery shop...they aren't Wilton. They are the ones that have perfectly square corners!! I looked at the cooking times on the Wilton site and have been going by that. But the edges of my cakes are getting too done, while the inside isn't quite finished cooking yet Should I lower my oven temp. to 325 and use the heating core or the flower nail?? I'm using a 6" and 10" square!!

Lower your temperature about 25 degrees and definitely use a heat core... I use the flower nail in mine and it works fine .. a trick I learned from here!! icon_smile.gif

thanks, i usually use it for cakes larger than 10". but i guess since these cake pans are so tall it takes longer to cook all the way through. i'll try that for my next cakes.
