Ice Cream Cakes, Can They Be Covered In Fondant?

I make ice cream cakes for family and I was wondering can it be covered in fondant? Also do you put buttercreme under it?

I used to work for baskin robbins and made ice cream cakes all the time. We never covered them in fondant, but I don't see why you couldn't. Although I'm not sure how fondant would hold up to being frozen? Anybody know?

As for buttercream underneath, I don't think it is necessary. We always just put a little ice cream underneath and that kept the cake stuck to the board.

Also we always iced our cakes with a softened ice cream. Baskin Robbins even makes a bright white ice cream just for this purpose. I personally think that this tastes much better than a regular icing on an ice cream cake. Just my 2 cents.

I wouldn't put fondant on an ice cream cake. Then again, I wouldn't put fondant on any cake. For my ice cream cakes, I do it the Baskin Robbins method--frost using softened ice cream. I do the borders and decorations with buttercream. Ice cream cakes are a real treat, I may just have to make one now. Have fun with it!

Hi, the only problem I see with it is all fondant recipes and books strongly recommend against putting fondant in the fridge, something about the moisture wrecking the stability of the fondant. An ice cream cake would have to be refrigerated. If you froze it solid and served it quickly, it might work.

I would think that the fondant would crack if you put it in the freezer...I haven't tried it but....

I think you could freeze the MMF... it would be like freezing marshmellows.. but it wont look like it does on a regular cake.. either it will crack and dry out when its frozen or it will be slimmy and sticky when it defrosts... what about molding chocolate??

icon_smile.gif I don't think it is a good idea.. because Fondant becomes suggy and gooey when it gets wet...Ice cream is wet as soon as it goes on room temperature,,,Whipped cream would probably be better.. icon_smile.gificon_rolleyes.gif

Yes you can make your own. It is quite easy. Make a cake. Place slightly softened ice cream on top of your cake once cooled and shape with a spatula then freeze. Once the ice cream is hard you can ice and decorate as usual. Just make sure you keep the cake frozen as you go. If you soften ice cream down to the consistency of an icing you can frost with this. Just crumb coat, freeze and then coat the cake and freeze again. You can put as many coats on as it takes to cover the cake and get a nice smooth finish. One trick when adding buttercream or other icing borders is to take melted chocolate in a condiment bottle and make a thin line of chocolate around the top edge of the cake, then border as usual. This prevents your border from sliding down the side of your cake when the cake begins to defrost at the party!

i usually bake a round cake... cut out about 1/2 inch out of the top leaving a nice "valley".. i then slap on fudge, the kind you get in a jar for sundaes, over that put a layer of cookie crumbs and then cover the entire cake with the icecream.. then decorate.. yummy!!!
