Whipped Icing For Filling

Hello Friends!
I was just curious if anyone has an easy recipe for a whipped icing (like whipped cream) that you can add preserves to like raspberries for a creamy fruit filling. I want something like whipped cream but that doesn't need a lot of refrigeration because I want it to be able to sit out (for a wedding) without spoiling or seperating. Would just regular buttercream work? I didn't want something to heavy or rich though. I thought something like Bettercream (sp?) but I have no place to get that around here. Any help or suggestions is greatly appreciated. I have a wedding cake to do at the end of the month and the bride and mom are coming over Sunday and I wanted to have some tasting cakes for them. I just found out about this today so it is very last minute.

Wilton makes a whipped icing mix that you could possibly use and add preserves too without having to refrigerate... most whipped icings require refrigeration .. I know Wilton's doesn't though.. HTH icon_smile.gif good luck!

Heather, I'm from Michigan too and I can find the Rich's Bettercreme in the frozen section of Gordon's Food Service (GFS) stores. I bet you have one around you. It's right in the freezer next to the coolwhip type toppings.
