I was interested in making Petits Fours for a Christmas party for work. I printed out the recipe from CC. After you make the cake and it's cool do you stack them on top of each other to get the two layers? It doesn't mention it in the recipe so I was confused. Also, do you have to use a jellyroll pan? Can anyone tell me how they make their Petit Fours?

I've never made them but the recipe and instructions that I have is as follow;

Make single layer sheet cake about 2" high.
Once cake is cool, cut into squares and place on cooling rack.
Place cooling rack on cookie sheet to catch drippings (drippings can be scraped off c/s and reused)
Pour icing over squares and cover well.
Once fondant has set, decorate.
