Buttercream Or Royal Iciing

can someone one tell me what kind of iciing is used on those fancy bakery cookies? i think its buttercream? is this a good iciing to use when making cookie bouquets?-any suggestions on wrapping individual cookies that are decorated? shrink wrap or bags? thanks gizzmo

I think most bakeries use royal icing. I don't know if buttercream would dry enough to stack or package. Someone else may have an idea. I use Toba's glace icing and that has been my favorite so far. It dries nicely overnight, and the cookies can be packaged and stacked. I put mine in cellophane bags.
