I was asked to make a cake shape like Italy . when it's time to carve the cake should i freeze the cake first, or can i let the cake cool then carve?
If i let the cake freeze when it come back to room tempt. will the cake be dry?


the cake need to be ready by thursday. when should i bake and freeze the cake?

I think it'd do better frozen and leave it frozen to carve... I've done some this way and I found it easier .. I'm sure there are others that will have different ways of doing it too .. icon_smile.gif

If you decide to freeze your cake you want to wrap it well with plastic wrap. I also glaze my cakes with a simple syrup before freezing. This helps keep your cake moist. You should frost the cake after it has defrosted.

If you decide not to freeze...you want to use a dense cake mix such as pound cake. This will make carving your cake much easier and freezing is not necessary. I have used pound cake without any trouble. Hope that helps. icon_smile.gif

I just did a 3D cake yesterday (VW bug). I like to use the recipe on here for "Durable cake for 3D/carving". It works really well, and is quite sturdy. I do still chill before carving, then wrap well after carving to put a crumb coat on before icing. HTH!
