Peiti Fours Without The Icing...how?

I have had a lady request a cake the size (about 1x1x1) of a petit four, but without the icing. She only wants a thing layer of icing in the middle and on top. The I am going to put a couple mmf flowers and leaves.

My question is how do I keep the little cakes from drying out without the icing? I am afraid if I make them early in the day , by 3pm they will be dry. But I am experienced enough to know that if I wait until just before somethign will happen and I will be stuck!

So, do you think they will dry out? Would putting them in tupperware work? If I make them now and then freeze in tupperware, then take out a couple hours prior will that work? Perhaps I could decorate with everything but the flowers and then freeze?

Oh I am stuck...please help.

Hello Julia, I bought a while ago, some great containers from Wal-Mart that I use to transport and to storage my cupcakes, they work excellent, and you dont have to refrigerate them, in this container, what I do Is I bake two to three days in advance and store them in room temperature, the container prevents the cake from drying when I haven't put the icing on them, once I do put a cream cheese buttercream I do store in the fridge.

I found my containers in the bakerware aisle in warlmart, and they are just beside the cake round dome containers, these are rectangular great for cupcakes and petit fours,
