Centerpiece Cake on Cake Central

This is just one of 24 3" tall, 6" round cakes for Jen & Brandon's outdoor wedding. To hold up in the heat, I had to modify my buttercream recipe by replacing the milk with water, used all shortening, and also added one tablespoon of meringue powder and one-quarter cup of cake flour. To my surprise, I got many compliments on the icing specifically...not too sweet, and it held up real well. After standing for 7 hours in high humidity and 85 degrees, the icing was as nice as when I first set the cakes out!

This is just beautiful. I love the presentation, too. Did you make the shells on top? I could have used your icing recipe when I lived in Texas!

Yes, I made 3 pounds of chocolate shells! I used mostly white chocolate and added just a bit of dark chocolate to get a marbled look, then dusted with pearl luster dust. Each centerpiece cake was decorated differently. Many had cornelli lace (my favorite), or simple borders like this one.
