I’ve done carved cakes before but wanted to try something new…modeling chocolate. Her hair is actually made from fondant but the head base is completely white modeling chocolate that I had tinted flesh tone then sculpted using gumpaste tools. The modeling chocolate made it much easier to sculpt the details of her face versus using fondant. The wings were formed from gum paste and one of the detailed items that was made prior to beginning anything else on the cake. I was a bit disappointed when I went to attach the wings because I had sculpted them with feather tips and most of them broke off during the process of attaching them.
