This is a hand sculpted fish cake that I did for my cousin's birthday party at Bonefish Grill. He is a silly guy, so I wanted to do something a bit out of the ordinary. I was planning to have blood, guts and gore oozing out of its stomach with intestines that spelled out the number 22, however I really rushed this cake and only had 4 hours to do the entire thing, from baking to sculpting. The fish is a red velvet cake filled with a big fat layer of vanilla Italian Meringue Buttercream covered in fondant. The background is also hand-sculpted from fondant. The blood was made with piping gel and red food coloring. I had fun doing this, but wish that I had more time.
