I made this for a party that marked the completion of the Children's Summer Reading Program for a local library.

Elephants body was made by baking two halves in a pyrex bowl. The head was an oval cake that I stood upright, the trunk was formed with rice cereal treats as well as the front legs, and the hind legs were cupcake bottoms. I iced the entire cake with buttercream and then airbrushed the color on. Eyes, ears, tusks, and books were all made with gum paste.
