Does anyone have arecipe for a good coffee-flavored filling that is fairly thick? I will be making a dark chocolate cake this weekend and they want coffee/ espresso filling. I looked in the recipes, but I can't find anything. detective.gif

This is something I found, not sure how it tastes or anything.

Creamy Coffee Filling (recipe follows):
1/4 cup EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 (8 ounce) package cream cheese, softened
2 tablespoons coffee flavored liqueur
1 1/2 cups whipping cream, whipped

Creamy Coffee Filling: In large bowl, beat first 3 ingredients until well blended. Fold in whipped cream. Chill, if desired.

for my coffee filling...which everyone loves with chocolate cake..

i use:
1 pkg of instant vanilla pudding
2 tbsp instant coffee
1 3/4 cups millk
1/2 cup whip cream

make the pudding with the milk and instant coffee. let it set in the fridge. when your ready to fill your cakes, whip up the cream and fold it into the pudding.
