Would anyone here have experience with Macarons? More specifically, the silicone baking mats. I will cut straight to the case here: When I bake on Parchment paper I don't have any issues with my macarons, however when I use the silicone mats, there's a 50/50 chance they will be ruined, if not most of them. Every batch turns out different with the same batter. Also, if I use the same batter on parchment, they turn out right. Is there a baking sheet that works best with the silicone? I have tried 3 different brands and I have the same issue. Am I missing something because everyone is talking about how great they are and when I use them, they taste amazing, but are not sale-worthy. Any tips, help or advice would be great, thank you!
I have a similar problem to that. I have lekue macaron silicon baking mat and whenever I use it I don't get feet on my macarons. If I use parchment I have no problems even tho it's the same recipe and procedure. Maybe someone else can help...
