Uncoated Cake Balls Help

Can I mak cake balls two days before coating and leave in fridge till the day of coating? 

And do they need to be at room temp in the chocolate so they don't crack?

Yes you can make them in advance. I put mine in Tupperware and use a dry erase marker and write the date that I made them on the lid. I take them out of the fridge and let set for 15 minutes before dipping.
