I was just decorating an 8 inch round 3 layer mud cake with white chocolate ganache for a wedding on Saturday and it just bulged and pretty much collapsed. I cannot use it. My question is I am out at work tomorrow (Friday) and have my best friend's 40th tomorrow night. Could I bake another cake when I get home from the party and then decorate it with ganache and fondant on Saturday before a 3pm delivery or am i asking for trouble? The bottom 10 inch tier is perfect. Thank you

yes you could --

i woud bake as soon as possible for best results so the cake can mature -- although i am not a mud cake specialist -- your timetable sounds reasonable --

best to you!

Not sure if this will come through too late but could you get up extra early and bake before work? I do that a lot just to give myself a bit of extra time to play with.

I work full time and run the cake business around that so I frequently get up at 3am, bake and/or do other prep, then go to the day job, come home and continue with cake work.

Just means that if I bake before work, then I can get cracking on things as soon as I get home rather than having to bake and then wait for it to bake/cool down before I can do anything else.

Best of luck to you though! Sounds like you have things under control otherwise!  x
