I just tried my first modeling chocolate figurine, and it actually turned out better than expected.  I thought I would need to do several trial and error ones, but with some clean up, the first one will be great.  Now I have two questions...

1. How should I store the completed figure until I need it for the cake topper?

2.  How long am I able to store it before using it?  I'm used to fondant accessories, but never done modeling chocolate.

Thanks

Modeling chocolate is pretty much the same as fondant at this point. Keep it covered to keep dust off, but not airtight. Keep it in a cool place and out of direct sunlight. It will last next to forever.
