I am looking for a really good white chocolate candy clay recipe. One that was recommended uses gourmet guittard white chocolate chips which I can't find local. I want to make sure the candy clay comes out smooth not grainy and the recipe says if you use candy melts the result will be grainy. Or suggestions on a white chocolate that would be comparable would be great. Thank you.

I don't use Candy Melts as I find them too sweet and more like candy than chocolate, and I want chocolate.  What other brands are available in your area?  There are bound to be people here who will have tried your brands and can give you an opinion.

FWIW, I use candy melts and it does not come out grainy.  Cake Paper Party (blog) has a great article on modeling chocolate, from what to use to how to fix it and pretty everything in between.  I particularly like the chart regarding how much corn syrup to use for the firmness.  I prefer a softer clay, so I tend to use a bit more...
