I have ordered the fat daddio mat online and it is fairly big. how ever it is still not big enough for the larger cakes. How does everyone here roll out their fondant for large cakes? With shortening and a mat or with cornstarch on the table?

When I use my mat I rub a little shortening, and when I use my table top I sprinkle a little PS.
