Hello!

I have my daughter very allergic to dairy and beef so no milk chocolate or gelatin allowed in the diet. I need a good replacement for modeling chocolate for her birthday cake. I'd like to make some chocolate roses and other decorations. Do you know of a particular brand I can use or a easy to make recipe?

You can buy non dairy vegan chocolate chips..Ghirardelli makes them, amoungst others. There's also carob chips..a chocolate replacement. You could use almond/rice/coconut milk as your liquid instead of cow's milk. I'd make a small batch to see how solid the ganache would be.

The Ghirardhelli 72% bars are dairy-free according to the labels, but the higher cocoa content ones aren't for some reason. They all have the "manufactured in a facility that also processes dairy etc" on it, so just read the labels. If you're making modeling chocolate you'd just need the chocolate and corn syrup, so that shouldn't be a problem.
