Could anyone tell me the steps to carving a cake and decorating it? like whether or not i should freeze it, for how long, how long should I leave it to defrost... when to cover it with butter cream? etc...

Personally, I stack everyting then carve it down at room temperature. If something's going to fall off the cake because it's carved too small or because of gravity, it will happen at room temp. So I just skip the middleman. If it's going to be stable at room temp that's your best bet.

What steps you should do something in would depend on the cake itself. What are you making?

There are SOOOO many car cake tutorials online...Just do a search on google and you'll find a ton. There's a very detailed on on Craftsy the Mike McCarey does that was really good, but it was almost TOO detailed. It's probably on sale right now, so you might want to check it out.
