Hi-Ratio Shortening

How do you guys store your Hi-Ratio shortening?  The first two times I purchased it, I ordered it online in a 25# bucket.  I have since found it at a food distributor about an hour away from my house (YAY - no shipping fees for me now).  They sell ALPINE brand in a 50# block.  I can get roughly half the shortening in the washed bucket but what do I do with the remaining 1/2 block?  Is it OK to leave it sealed up in the plastic bag & ALPINE box it came in?  Last time I bought it from the distributor, I cubed the remaining shortening up into Ziploc bags and stored them in the freezer, but I have no extra freezer room this time.  I will use all 50# in just a few months.  No special instructions on the box it came in - just to store between 65-75 degrees F (room temperature)!  What do you think - how do you store it?

If you are going to use it all in a couple of month, room temp in the folded over bag in the box in a cool room should be just fine.
