My son is getting married 9/26/15 and I'm doing the wedding cake for 235 ppl.
I don't do cakes anymore but when I did I usually covered the tiers 2 days prior with fondant. I fridge all my cakes as I use IMBC. Since the wedding is 2 hrs away and I've been assigned a ton of other things to do for the wedding as well, was wondering if I could cover the tiers 3 days prior and still be ok? I use Albert Uster's Massa. Just don't want the fondant to be to tough to cut for my son and DIL. What do all you experts think?
