I found a recipe for vanilla cake (http://divascancook.com/moist-yellow-cake-recipe-old-fashioned/) but its for 9 inch pans and I need to make this for 10 inch pans. I suck at adjusting measurements and was wondering if it the problem could simply be fixed by doubling the recipe.

Another note: the recipe is for 9 inch pans with 2 inch sides and I have 10 inch pans with 3 inch sides.

you only need an extra two cups for a two layer cake (less than one cup per layer additional)  so you could one and a half it and still have a bit leftover for cupcakes --

this chart might help you
