I have a major cake/cupcake order coming up for a 1st birthday and the requested recipe used for the cake(s) is Wilton's PB&J cupcakes. This is a peanut butter cake filled with a jelly filling and topped with peanut butter frosting. I am nervous however of how the frosting will hold up in nearly 100 degree weather (in Florida) and HIGH humidity. This is an outdoor party; there will be shade, but the heat scares me. Does anyone have a successfully reliable peanut butter frosting that will survive in the heat? Thanks in advance!!
