Hey! I have a customer that wants a bday cake on a Sunday, but I will be busy decorating cupcakes from that Wednesday to Saturday. My question is. . . how long can a decorated cake stay fresh? Could I make/decorate the cake on Monday or Tuesday for the Sunday bday party if it's refrigerated??

Thank you so much!!!

I dont think I would ruin my name by giving a client a week old cake. How big is the cake?  I would bake it the same day you're baking cupcakes and freeze it. Friday in between working on cupcakes I would frost the entire cake and Saturday decorate and then leave it in the fridge for Sunday pickup. I've learnt breaking up the steps of a cake lets you make multiple cakes for the weekend without being overwhelming. :)

It will be an 8" or 10" round cake.

You'll be fine having the cake fully decorated by Friday at the earliest...any earlier I'd be worried and cakes do pickup other odors/flavours from the fridge.
