hi everyone! I'm new to cake decorating, and let me just say i looooove it! I'm dong my first official wedding cake. the wedding is saturday. the couple hasn't decided if there going to pick it up on friday o saturday the day of there wedding. so I'm wondering is i make and have it assembled on wednesday where should i store until they get it? I've read so many different things. keeping it in he fridge, keeping it in a cool place. whats really the best way??

AWednesday bake, torte, apply wash, fill and prepare for settling. Thursday frost and decorate. Or frost stack and decorate Thats for a Friday pickup.

For a Saturday pickup move everything forward a day.

You can also bake ahead and freeze.
