I really need help, I am to make my sisters wedding cake in the next things months but thought I would have a practice run first.

I am having problems finding an you tube video or any instructions on how to make them fan looking things in milk chocolate not white.

Are the fans made from squares or circulars?

Also what am  best  use, chocolate modelling paste or chocolate flavoured fondant,

Any helps would be great please
