AWhat is your schedule like when getting a cake done for a Saturday/ Sunday? I usually bake Wednesday and freeze. Take them out Friday morning to thaw and crumb coat at night. Then leave everything until Saturday morning at 6am. I put fondant over cake and decorate te day of.

I bake anywhere from Sunday to Tuesday  depending on my schedule and when my family demands my attention. I don't freeze as I bake mudcakes and they are better left to mature. I just wrap them in glad wrap and leave them. I ganache Wednesday , fondant cover Thursday . Remaining decorating Friday.  Deliver or Pick up Saturday.

I usually bake on Friday and just keep the cake covered and do the crumb coat on the day the cake is needed for.

AI only bake cakes which are best matured too, that gives me a good 5-7 days decorating time, no point rushing if I can help it :-)
