What does my royal icing appear slightly grainy and dried out? I would like my flower petals to look smooth.

ARi can appear grainy if sugar crystals have developed in the mix. Next you make it add about a teaspoon of liquid glucose to the mix. Not sure why it works but is seems to prevent crystal formation.
