American cake portion help

What size cakes do you guys in the US usually do for 90 portions? Our portions are smaller (1x1) so I would normally do a 5/7/9 but I'm sure that would be considered tiny and it's a customer from the US.

AHi sugared. I would use a 6,9,12, for 98 servings.

AI use 1x2 for sponge cakes and 1x1 for fruit in the UK...personally I think 1x1 is way too small for fruit cake!!! Love the stuff :-) I think that US cakes tend to be a bit deeper than ours though as I read a thread the other day saying that a standard wedding cake portion using the Wilton guide was 1x2x4...personally, I don't see many 4" deep wedding cakes on a regular basis in the UK.

Does it depend on if the customer wants the cake as dessert or as an after/with coffee 'extra'? surely the customer can have it as large as she likes, so long as your resources/ingredients are covered.  Good luck

i thought the american size was 2x2... i think thats what the bakery who did my wedding cake said.... we had 6,8,10 rounds and 14 inch square.... our cake was suppose to feed 250 but ended up feeding 130 at the wedding and then the day after we served our church of 120 and still had the top layer for hubby and i too eat...

The portions are 1x2x4. 8" cubed, so a sheet cake would be 2x2x2. It is more than enough, which is why I don't get the people who come on here and act like the wilton serving chart will not be enough cake. And this is for a sponge type cake, filled, not a mud cake, brownie or fruit cake. Most Americans would decline the fruit cake. Period. So you would need even fewer servings than your 1" square piece.

ASeriously though,I agree with a 6,9 & 12 as well for north American servings. That's 100 servings for me.
