What I do is make chocolate SMBC for the outside, and just use the coconut pecan mix as filling.  I make a dam with the buttercream, then fill.  I use the filling on top with a border around it to keep it in.  I've never seen a German chocolate look decent with the gooey stuff as frosting. The layers can be soft too, so I chill them before trying to work with them.

AI'll try chilling the cakes next time. Thanks.

Are you icing the cake with butter cream?     German chocolate icing is it's own recipe and that's all you use.

AI start with cold cake layers to keep them firm while you spread the coconut pecan filling.
