Frosting Help!

Hi,

So, I have 48 cupcakes to frost by Sunday 11 o'clock. I was thinking about using the 7 minutes (marshmallow) frosting, but I've read that it doesn't keep well and I would probably have to start frosting them on Saturday night seeing how it's for the morning. I've only used it on 12 cupcakes batches that were eaten in the following two hours or so... So the question is: can I safely frost those cupcakes with that icing or not? Suggestions and ides are welcome! Thanks!

I wouldn't make it too far ahead...definitely no later than the night before. It looses its fluffiness after a while - sort of deflates. It's one of my favorites, but I make it only a few hours before I will be serving it. If you want something light in texture, you may want to try Swiss Meringue Buttercream.
