Cannoli Filling + Ganache + Fondant

AI have a wedding cake due on Friday. White cake with cannoli filling and I'll be using ganache under the fondant. I hear mixed reviews on ganache and/or fondant being put in the refrigerator. The filling is perishable so I know it sould be put in the fridge I just want to know if I should expect a sweaty cake on Friday morning. Has anyone had problems with the icing combo in fridge? Thanks for any input!

Depending on your location and given the time of year, you may expect a sweaty cake.  I live in a very dry climate and rarely have any problems with a sweaty cake coming out of the fridge.  The best advise I can give you, is to take the cake out of the fridge several hours before delivery and don't touch it.  It will probably look sweaty, but that should evaporate.
