South Florida Weather And Cake Decoration

Hello everyone,

I'm ready to start my first ganache (white chocolate) under fondant cake decoration but I have some questions.


1. South Florida is warm and humid, is a good idea use ganache instead the traditional icing?

2. This cake need to be transported for 2 1/2 hours after finished and the party is next day, how safe is the ganache in this case.
