AThe Wilton website has a neat chart that has different sizes and sketches and it tells you how many ppl it will serve. In regards to stacking there's TONS of information if you just do a simple search on here,YouTube, google etc. there are literally videos showing you how to do it.
8,10,12 and 14" in round cake tiers will feed about 196. As long as you dowel them probably and assembly them at the venue it should be fine. If you are really worried you can always use SPS and it will give you the most protection for stacking.

SPS is a single plate separator support system, you can also just the wilton version that uses the hidden dowels that fit into the separator plate. There are a lot of decorators here that use it often and would know more about it, I usually use wooden dowels and have never had a problem.
