AI always have some splotchiness with my colors when I use SMBC. I do a thorough job of mixing, so I really don't think that's the problem. The problem seems to appear once I hot-knife a cake I've pulled out of the freezer in an effort to smooth out the icing. I'm pretty sure this is attributable to the heat from the blade melting the fats. I don't own an airbrush machine (yet-it's on the wish list) so that's not a workable fix for me. Does anyone have any other suggestions for avoiding the splotchiness?

You are using oil based candy colors rather than water based gel colors right?

AI have been using Wilton's gel colors. I need to pick up some oil based colors, huh?

I have the same problem as well with SMBC that hasn't had colour added. It's just more apparent when the icing's been coloured. I thought it was the hot knife/fats issue.
