Does anyone have a recipe for shortening free/dairy free marshmallow fondant? I know someone who can't have either, but wants to try an alternative. She is also looking for a good "buttercrean" type frosting that might work to decorate her kids birthday cakes.

Is it the soy in the vegetable shortening her son can't have?

If you can't find a good one to make, look into the wilton fondant. Not really tasty, but it will make it look pretty.

I know that Michele Foster's Fondant uses butter or shortening, but the shortening get's melted. So maybe you could try to use oil of not soybeans and see if it will work. And I use coconut milk with her recipe and it works great.

Hope this may help.

Also, I've made frosting with soy free earth balance, and it was tasty, but it was very soft and didn't hold very well. But I only made it once. Maybe if I used less earth balance, it would have held it's form better.
