Hi, I'm making some vanilla cupcakes with cream cheese frosting and strawberry on top...Does anyone know how I can keep the strawberry from going bad on the cupcake?

You won't have days. However, a glaze of melted apricot jam will help to preserve the berries, keep them from drying out, and give them a nice sheen. the glaze should be be cool so it doesn't cook the outside of the berry.

Strawberries that aren't refrigerated can grow mold overnight.

Put the strawberies on just before serving. I like mine natural.
