Dear all,
I want to make gumpaste for my flower from Fran's recipe...but I wonder about ingredient cream of tar tar, cause in My country cream of tar tar is still wonder, allowable or not....so I prefer to not use it in my cake decoration.

So maybe anyone know how to substitute cream of tar tar with ? so I can made good gumpaste without cream of tar tar.

Cream of tarter is an acid. Check out this website for more info on it. http://bakingbites.com/2008/07/what-is-cream-of-tartar/ There really is no substitution for it, especially if you are trying to make gumpaste.

People don't normally eat gumpaste anyway. It's disgusting. icon_biggrin.gif

Nick Lodge's gumpaste recipe doesn't use cream of tartar.
