I have a cake due in 4 days. I want to make white chocolate ganace as the filling. How long does it stay fresh before the cream spoils? Also it will not be in the fridge since it is going to be covered in fondant... will the ganache spoil??? lol obviously i am still a novice!
Well, this is a little late for your project, but ganache lasts for at least a week in my un-airconditioned, tropical, humid kitchen. I don't know how much longer it might last, because it's always gone by then!
