Is there a good,tastey cream cheese frosting recipe that will hold good under fondant? I want to make a red velvet fondant covered cake with cream cheese frosting. Also I need a good red velvet cake recipe that will hold under the fondant as well. Thank you!
I use the Decorator Cream Cheese recipe on this site.
It doesn't taste as good as some of the other cream cheese icings, but it is very good and firm enough to stand up to fondant.
The cake in my photos that is Julianna's cake (all purple and white with the crown) was a red velvet cake with white chocolate cream cheese buttercream. Held up great under the fondant.
I use Bobby Flay's red velvet cake recipe.
And I use a variation of IndyDebi's buttercream that MamaWrobin did for the buttercream. It tastes awesome! It's on page 3 of this thread.
The icing also goes really great with carrot cake.
