Hi I am considering doing a topsy turvy cake for my nieces birthday but for some reason I feel a bit intimidated by them. Yes, I have researched them and watched you tube videos but I am looking for suggestions and hints from you. Are they difficult to do? Thanks for your help.

The best tutorial I have seen is on www.designer-cakes.com it costs £9.95 for one months subscription (about $6-7) and there are about 30 different tutorials on there at the minute.

My tips would be, use ganache, don't cut the slope too severe and have the cut bit at the bottom rather than at the top.

Do you use 3 different size cakes for one tier or do you use 2 of the same size cakes and one smaller on the bottom and then cut it down?

For a 3 tier, I'd bake a 10"/8"/6" round, 2.5-3" tall. Taper the 10" down to a 6", the 8" down to a 4" and the 6" down to a 2". When it's all carved, I'd then split it into the layers.
